Outfitted with rich cherry woods and a stellar floor-to-ceiling wine cellar 801 Chophouse {3000 East First Avenue, Denver; 303.214.6474} hearkens back to the classic steakhouse era. The Iowa-born chain debuted in the Cherry Creek in 2016, bringing with it USDA prime cuts—presented tableside before being cooked to your liking—globally sourced seafood, and classic steakhouse sides including Roasted Brussels Sprouts and Creamed Corn. The bar program is just as timeless, presenting top-shelf liquors with dozens of Cognacs on offer, while the cocktail menu nods to the roaring 20s with a lineup of classics. This week, we traveled back in time with Liam McKeon of 801 Chophouse.
When did your passion for bartending first develop?
My passion developed after I moved to New York City in 1995. I worked at noted establishments, including Pescatore Restaurant and La Grenouille, which truly enhanced my bartending skills.

What flavors are you inspired by this season?
I’m inspired by winter spices like mulled cinnamon sticks, nutmeg, cardamom, allspice, cloves, and brown sugar.
What’s the inspiration behind this cocktail?
I wanted to incorporate the winter season into a cocktail, utilizing mulled spices and rye whiskey.
Recipe for 801 Winter Old Fashioned
In a large old fashioned glass, muddle one orange peel, two Luxardo Cherries, a splash winter simple syrup, and one dash Angostura Bitters. Add 2 ounces High West Double Rye and stir. Add one large ice cube and top with a splash of Q Ginger Beer. Stir and serve.
